Awesome Recipe my Mom Makes



As I've said before, I cannot cook.  I don't find it fun.  I don't find it easy.  I can't just walk around my kitchen and pick up ingredients and say "oh, this will make a nice soup."  I can't identify things in the fridge that will taste great in quiche (I don't even like quiche).  My Adoptive Mom is good at cooking and so is her mom.  My Adoptive Father is good at cooking and so is his dad.  My husband is good at cooking and so is his mother.  I know my First Mom is a good cook because I've eaten her cooking; I'm not sure if she likes cooking or not though, I should ask her.

"I can't cook"

"Yes you can."  My husband assures me.  "Cooking is really just following directions." 

To which I reply: "I can't follow directions."

He says: "you follow directions all the time."

Me:  "cooking is different!"

Don't get me wrong, I can and do cook.  I have a repertoire of dishes I can make that I've learned to make by following the directions after trial and error.  One dish I love is taco soup.  The first time I had it, I was in high school at a family friend's house.  My mom somehow got the recipe and started making her own.  This is actually a dish I can cook.

Taco Soup
1/2 to 1lb of ground beef
1/2 cup chopped green pepers
1/4 cup chopped onion
1 and 1/2 cups of water
One 8 oz can of tomato sauce
One 16 oz can of chopped tomatoes
One 16 oz can of kidney beans
1 envelope of taco seasoning mix

(it doesn't matter if the measurements are perfect or not)

Cook the hamburger in a separate pan.  Cook the onions in a skillet.  Add the hamburger and onion with the rest of the ingredients in a large pot.  Simmer for 30 minutes.  DONE!  It's also really good in the crockpot too.  Serve with shredded cheddar cheese, sour cream, tortilla chips (etc).

(In case you're wondering, that is my dish above and by bag of frozen veggies in the picture.  My philosophy is, if you put it in a pretty dish it'll convince everyone it tastes better).

  1. You crack me up because you sound just like me. I have about 5-6 dishes that I make well. I can almost last the week!

    Here's an easy one for you:

    Take 2-3 chicken breasts, no bone or skin.
    Toss into an oven dish. Pour a small can of diced tomatoes on top. Crumble a boullion cube over it. Pour a cup of white wine on top. Stick in the oven at 390 degrees for an hour; every once in a while, spoon some of the liquid over the chicken (if it's not liquidy enough, you can add a little hot water -- or more wine!).

    While it's cooking, boil some pasta (I like interesting shapes). Drain. (They always say that -- like you're going to eat it in the liquid?) Serve with the chicken, spooning some liquid over the pasta as well. It's yummy and fairly healthy.

  6. Don't worry - I am a wonderful cook, and I still wonder where my "gift" came from. My mother can't cook well, my father left it to us, so who knows!
